Believe it or not, Vegan Strawberry Ice Cream has only two ingredients! Creamy and light, this sweet treat is easy to make in no time at all.

On the lectin-free diet, fruit is viewed as “nature’s candy” and green bananas are allowed (less sugar), but in moderation. Just as this is categorized as dessert, it should be treated as an occasional treat!

Vegan Strawberry Ice Cream

  • 3-4 whole green bananas (chopped & frozen)
  • 10-12 whole strawberries (chopped & frozen)
  • 2 whole strawberries (sliced *optional garnish)
  • mint leaves (optional garnish)
  • Equipment needed: Vitamix and Spatula
  1. Cut bananas and strawberries into smaller pieces (diced) prior to freezing.

  2. Freeze fruit for a minimum of three hours before blending.

  3. Once frozen, pour fruits into Vitamix and blend, occasionally shutting off the machine to evenly distribute frozen chunks. 

  4. Blend mixture until creamy and smooth.

  5. Take a spatula to remove the mixture from the Vitamix into a large bowl.

  6. Use an ice cream scoop to serve in dishes. Optionally garnish with mint and fresh strawberries.

  7. *note this “ice cream” recipe is best served once made and can melt a little faster than regular dairy ice cream, so get those spoons out and eat up!
