I am often asked what I snack on being lectin-free. Of the many snacks I eat, I always keep a variety of nuts on hand in my cupboard (which I eat raw, baked or as a crunchy addition to salads).
It’s a simple treat, however, to have nuts warmed in the oven with fragrant herbs adds a more complex profile to your average handful of nuts.
Savory Herbed Nuts will satisfy your craving for a “midnight snack”, without any of the guilt. The aroma in your kitchen alone will be well worth the few minutes it takes to make this treat.
Savory Herbed Nuts
- 2 cups walnut halves
- 1 cup pecan halves
- 1 cup hazelnuts
- 2 tbsp pastured butter
- 2 tbsp herbs de Provence
- Maldon salt flakes to taste
-
Preheat oven to 350 degrees and place parchment paper on a baking sheet.
-
Melt butter in large pan over medium heat.
-
Once butter has melted, add all nuts. Stir until nuts are completely coated.
-
Pour coated nuts on the lined baking sheet and distribute evenly.
-
Season nuts with herbs de Provence and salt. I used Maldon salt because it is larger in shape and works well with an assortment of nuts for its size and texture.
-
Bake for 25 minutes. Serve warm for a special treat! Leftovers can be stored for a later date in a container or jar.
