I am often asked what I snack on being lectin-free. Of the many snacks I eat, I always keep a variety of nuts on hand in my cupboard (which I eat raw, baked or as a crunchy addition to salads).

It’s a simple treat, however, to have nuts warmed in the oven with fragrant herbs adds a more complex profile to your average handful of nuts.

Savory Herbed Nuts will satisfy your craving for a “midnight snack”, without any of the guilt. The aroma in your kitchen alone will be well worth the few minutes it takes to make this treat.

 

Savory Herbed Nuts

 

  • 2 cups walnut halves
  • 1 cup pecan halves
  • 1 cup hazelnuts
  • 2 tbsp pastured butter
  • 2 tbsp herbs de Provence
  • Maldon salt flakes to taste
  1. Preheat oven to 350 degrees and place parchment paper on a baking sheet.

  2. Melt butter in large pan over medium heat.

  3. Once butter has melted, add all nuts. Stir until nuts are completely coated.

  4. Pour coated nuts on the lined baking sheet and distribute evenly.

  5. Season nuts with herbs de Provence and salt. I used Maldon salt because it is larger in shape and works well with an assortment of nuts for its size and texture.

  6. Bake for 25 minutes. Serve warm for a special treat! Leftovers can be stored for a later date in a container or jar.
