Ingredients

  • 2 packs prosciutto
  • 2-3 ounces goat cheese
  • 3-4 sprigs fresh thyme
  • 3-4 tbsps honey
  • olive oil spray

Instructions

  • Preheat oven to 350 degrees.
  • Spray a muffin sheet (small muffin size) with olive oil spray.
  • Tear prosciutto slice to line each muffin cup completely. I found with the small muffin sheet, one slice of prosciutto could cover 2-3 cups.
  • Once all cups are lined with prosciutto, bake in the oven for 8-10 minutes.
  • While the prosciutto is baking, chop the goat cheese into small cubes that will fill the center of each cup. Remove stems from thyme.
  • Once the cups have baked and are crispy and firm, remove from the oven. Cool for 5 minutes.
  • Delicately remove each cup from the muffin tin and set on your serving plate.
  • Add goat cheese into each cooled cup. Sprinkle with fresh thyme leaves and lightly drizzle honey.
