I love salads, but this Peach and Arugula Salad, in particular, speaks to everything summer.
It’s light, yet rich and nuanced. The flavors are so well balanced and every bite tastes like the flavors of summer.
Instead of adding the typical tomato with burrata, opt for peach or another stone fruit for a lectin-free option.
Peach and Arugula Salad

Ingredients
- 1 bunch fresh arugula as much as desired
- 1 halve peach
- 1 a handful of walnuts
- 1 ball Mozzarella Di Bufala
- 1 tbsp olive oil
- 1/2 tsp balsamic vinegar
- salt and pepper as much as desired
Instructions
- Place arugula throughout the plate evenly. Depending on your preference, you can opt for heavy greens (as I like it), or a light sprinkling of arugula.
- Slice the peach and mozzarella into thin slices and place evenly over arugula.
- Sprinkle the salad with walnuts and dress with olive oil and balsamic vinegar. Add salt and pepper to taste.
