With over a decade of having two autoimmune diseases (both Lupus and Hashimoto’s) it was critical for me to find nourishment that boosted my energy levels vs. inflammatory foods that led to complete depletion. I have been in remission for many years now and a large part of that blessed health hurdle and accomplishment is due to consuming intentionally healthy ingredients to fuel my body, instead of poisoning it. There are not many lectin-free smoothie recipes out there, so many smoothies are packed with exotic fruits, high amounts of sugar, and ingredients that are doing the reverse of what we are seeking; maintaining our ideal weight, sustaining natural energy, and keeping our digestive system happy and thriving. Looking at the ingredients you’re probably thinking “What’s the big deal?” Well, mix it up yourself and see… or should I say, give this recipe a whirl for a refreshing, revitalizing, and sweet smoothie.
What are the health benefits of this simple smoothie?
Apart from being anti-inflammatory, easy to digest, and lectin-free, there are incredible health benefits in this simple recipe. Let’s talk about the ingredients I intentionally added in for flavor, but also to pack a nutritional “punch”.
Spinach alone is high in fiber, has numerous vitamins (A, B6, B9, C, E, K1), folic acid, calcium, potassium, magnesium, is high in fiber and has other notable health benefits as well.
Lemon juice is full of Vitamin C with citric acid as well as iron. That said, lemon juice is a natural immunity booster, protects against free radicals, is antibacterial, and also antifungal.
Spinach and Vitamin C (lemon juice) together are a dynamic duo; a synergistic and magical combination of ingredients that have a pronounced nutritional impact when consumed together. Oftentimes, spinach salads will have strawberries or a lemon juice dressing, which is a wise combination to keep in mind to really get the most benefit and nourishment from your food.
What makes this combination so special? It dramatically amplifies your body’s iron absorbtion. Iron reduces fatigue, improves mental and physical performance, and is crucial for building collagen, which supports hair, skin, and nail health.
Dates are also energy-boosting, contain selenium, magnesium, calcium, copper, and phytonutrients. Dates naturally reduce inflammation and improve hormone regulation. The date brand I recommend is Del Real Medjool Dates – they are always ripe and soft.
Mint is Mother Nature’s breath freshener and digestive aid. Additionally, mint is antioxidant-rich and full of Vitamin A.
Avocado is full of Vitamins C, E, K, & B6, folate, magnesium, potassium, and omega-3 fatty acid.
As you can see, this is truly an energizing, healing smoothie with simple ingredients that are easy on your digestive system.
What is most important, although entirely simple, this lectin-free smoothie recipe is delicious, refreshing, and filling. Stick around because being healthy is more enjoyable than you think.
Smoothie Recipe:
- 1 1/2 cup water
- 1/2 lemon juice of
- 1 1/2 cup spinach
- 1 halve ripe avocado
- 2-3 sprigs mint (stems included)
- 2-3 large juicy dates (plump and soft)
- Pour water into Vitamix with a squeeze of lemon. Add spinach and mint. Then add avocado and pitted dates.
- Blend on the lowest setting to chop all items gently. Gradually turn up the speed until the mixture becomes smooth and fully blended (no longer than one minute, you do not want to over blend).
- Garnish with mint is optional, but a lovely touch.
