After a long day at work, the last thing I want to do is put much effort into making dinner. However, I still want something delicious, filling and healthy. Challenge accepted! This one dish dinner is as simple (and delicious) as it gets and ready in only 35 minutes!

Wild salmon, cauliflower rice, garlic and one whole onion sprinkled with an assortment of herbs for a decadent and satisfying dinner. Guess what? The salmon and cauliflower rice were frozen *gasp*! Shhh… no one has to know because it’s as delectable as if you were slaving away in the kitchen (and not at the office).

One Dish Dinner in 30!

Ingredients

  • 2 steaks wild salmon frozen
  • 12 ounces cauliflower rice frozen
  • 5 whole garlic cloves skins on
  • 4 tbsp olive oil
  • 1 whole lemon juice of
  • 1 tbsp dried tarragon
  • 1 tbsp salt Maldon flakes
  • 1 tbsp cracked black pepper
  • 1 tsp coriander
  • 1 tsp cumin
  • 1 whole onion skin removed

Instructions

  • Heat the oven to 400 degrees.
  • Use an oven safe dish (I used my handy dandy cast iron).
  • Pour cauliflower rice (I used frozen) into the pan and disperse evenly. Place wild salmon (again, I used frozen) on top.
  • Slice an onion in half and place in the dish alongside salmon. Place 5 large garlic cloves throughout the dish, keeping the skins on (remove skins once the dish is baked). If you have smaller garlic cloves, tuck them under salmon steaks (smaller cloves can burn in the oven and tucking them will keep them moist).
  • Drizzle juice of one lemon over dish along with olive oil. 
  • Sprinkle salt (I used Maldon which is larger and coarser), cumin, coriander, black pepper, and tarragon over the entire dish evenly.
  • Place dish in the oven for 30 minutes. If you opt for non-frozen ingredients, only bake for 15-20 minutes.
