Rinse strawberries and throughly pat dry. Chocolate will not properly adhere to the strawberry, if they are not completely dry.
Fill a small pot of water 3/4 full or so. Find a glass bowl that will sit comfortably on top, with about 1" room between the bowl and level of water.
Heat stovetop to medium low.
Pour in chocolate and stir continuously until melted completely and there are no lumps in the mixture.
Lower heat to a simmer to keep the chocolate from hardening.
Hold stems of strawberries and roll around in the chocolate to cover. You can dip as far as you would like. I like to have some completely covered and some partially, so you can still see a peek of red.
Once a strawberry is dipped, place on a baking sheet covered in either tin foil or parchment paper.
Store in the refrigerator to harden the chocolate. Pull out any time to serve!
