Equipment

  • 1 large pan
  • 1 medium pot with vegetable steamer
  • *1 crockpot or Dutch oven this is if you want to do the fast version of this recipe.

Ingredients

  • 3 tbsp olive oil or coconut oil
  • 2 whole sweet potatoes, *optional to peel you can use white, orange, or Japanese (purple) sweet potatoes
  • 3 whole celery stalks chopped
  • 3 whole carrots, *optional to peel chopped
  • 3 cups Swiss chard *swap with assortment of leafy greens or other lectin-free vegtables.
  • 2 large eggs with shells
  • 1 pound grass-fed ground beef *swap with lamb, bison, or grass-fed meat of choice

Instructions

  • Heat large pan with olive oil over medium-high heat.
  • Add ground beef broken up with a metal spatula or spoon in the large heated pan.
  • Peel and quarter 2 large sweet potatoes.
  • Fill a medium pot with water up to the bottom of a metal vegetable steamer, heating over medium-high heat.
  • Place sweet potatoes on top of the vegetable steamer in the pot. Place a lid on top for 20 minutes or until cooked tender. Use a fork to check if the sweet potato is cooked through and the fork goes in with ease.
  • While sweet potatoes are cooking, chop all vegetables (carrots, celery, and greens).
  • Add vegetables to meat and stir continuously until meat is brown.
  • Mix two raw eggs in a bowl with a fork. Do not discard egg shells (if you have a small puppy, do not use egg shells in the recipe).
  • Add scrambled eggs into the pan with meat and vegetables and mix everything together. Crumble egg shells into small pieces into the mixture. Continue to stir until eggs, meat, and egg shells are fully cooked. Remove from heat.
  • Once sweet potatoes are fully cooked remove from heat and place potatoes in the pan with the meat, egg, and vegetable mixture. Using a potato masher or metal spatula chop or mash all ingredients into small pieces.
  • Let the mixture cool before serving or storing.
  • If you want to make this recipe extra fast, consider using a crockpot for all ingredient instead. When using a crockpot, chop all ingredients (meat, vegetables, eggs, eggshells) and place in crockpot along with olive oil. Add 1/2-1 cup water since it will cook longer in a crockpot. Use the lowest setting for a few hours (2 if possible, longer is fine). Make sure meat and eggs are fully cooked and mash or chop all ingredients.
